The newly opened Le Rêve unites French cutting-edge cooking techniques with fresh Japanese ingredients to provide premier fine dining experiences. Le Rêve is a new participant for HK Restaurant Week Summer 2016! The exceptional concept was a collaborative achievement between Leo Ng, Gabriel Wong, Lee Kwok Wai, Leonard Tam, and Wyman Au. The long awaited project was completed with head chef Ryogo Ozawa.The culinary prowess brought his talent from three-Michelin-starred L’Assiette Champenoise in France to Le Rêve. Combining the innovative approach of French practices and Japanese ingredients, his outstanding expertise shines through their set menu “A Harmony of Earth & Sea”. You can choose between a 6 or 8 dinner course meal from $980 to $1380 with additional wine pairing selections. The sections are split by Plage et montage, Saison, Tradition, Prairie, Pousse and Paix. For Hong Kong Restaurant Week 2016, Le Rêve has created the perfect harmony between their appetizers to dessert. An appetizer that we recommend would be the Scallop and Sea Urchin with Squid Ink Purée and Vichyssoise. The perfectly cooked scallop is topped with fresh sea urchin creating an impeccable pairing of the two Japanese delicacies. The side of the bowl is adorned with the almost camouflaged squid ink purée that accentuates the harmonious flavors of the dish.
One of our favourites is from the Tradition section of the set menu, Nodoguro (Nagasaki), Premium seabass served with zucchini puree, thin potato ring and delicate accompanying sauce.
The Bamboo Charcoal/Raspberry is a perfect way to end your meal at Le Rêve. The guilt free dessert is served on a wooden square with immaculate presentation. But the highlight of the delicacy is hidden inside: incased in the charcoal tart is a light custard with a hint of raspberry sauce.
Afterwards, with a backdrop of Happy Valley, the spacious terrace allows guests to relax with drinks and experience cocktail shisha. The second restaurant in Hong Kong to offer cocktail shisha as a menu that includes various combinations of fresh fruit.
